
Special Selection Offerings 2008
Our Special Selection coffees are note worthy for a variety of reasons These are small and micro lot, estate grade, specially processed and handled, green coffees. We first roast them on the sample roaster and often "bracket" the roast to entice the subtle flavors of nuts, berries, and citrus to a more pronounced position of the overall taste. This "bracketing" allows us to find the exact temperature at which the coffee flavors are at their peak and sweetest. These coffees often come from specific areas of a plantation or during a particular time of the harvest season. The overall quality of these coffees far exceeds coffees that are blended at harvest or at the mill. These coffees often go from picking to processing, and shipment as a single lot from a single grower. Brew these coffee in a French Press, or thermal server for best results. Try them as espresso too. Smell, drink and enjoy immediately.
Brazil Bahia
From the Brazilian region of Bahia, which is in the Northeastern part of the country at the junction of the Atlantic Ocean and the Bay of All Saints. (Sao Salvador da Bahia de Todos os Santos) It was grown by Rafael Augusto Ladeia at an altitude of 900 meters (2950 ft). and was sundried on patios.
This coffee cups classically for the region and was the 2nd place coffee in the Tristoa sponsored Bahia coffee competition. It is a soft, full body coffee, with dark chocolate notes, faint nut and nut shell nuance. It is a very well balanced and will stand on its own or may be paired with sweet pastries. This is a very limited offering, we bought the entire lot.
Organic Ethiopian Golocha
This is by far one the best organic coffees I have found in years. This a blend of coffees from very small farmers in a mountainous region of Ethiopia that has been growing coffee for 115 years. The farms are located at an altitude of 1800 - 2000 meters (5900 - 6500 ft.) and are shade grown under a natural canopy. It is roasted on the light side of medium, which brings out its natural sweetness and balance. We tried this coffee roasted a little darker and the flavor evaporated in the roaster. So if you think only dark coffees are good, this one will give you a pleasant surprise. It has a mild and soft body, a bright raspberry, and blackberry essence that shines though the coffee all the way through the finish. This coffee is best on it own without cream and sugar.
Sulawesi Toarco
A washed, shade grown Indonesian coffee from rain forest Toarco on the Island of Sulawesi, perhaps more commonly known by its Portuguese name, Celebes. Only red or burgangy cherries are hand-picked from this small plantation (300 hectares) which is at and elevation of 900 - 1250 meters (2950 - 4100 ft.) The final proccessing includes hand sorting of defects. It brews a deep cup of coffee with an aroma of maple syrup, nut shell and coffee. It embarks a, dark, dusty earth coffee flavor, a full, heavy, body that finishes with sweet tropical fruit. |
